Savage Blonde Oyster – Savage Harbour, PEI, Canada (surface cultivated)
The Savage Blonde shells are usually light colored although we do occasionally see some dirty blondes (darker brown). At approximately 3” in size, the Savage Blonde meats are full and sweet with a briny mineral flavor typical of North Shore, PEI oysters. These oysters are cultivated in floating bags and typically take 3 - 4 years to reach harvest size. The floating bags are to control any predators and tumble the oysters within the bags to improve shape, meat quality, and shell thickness.
